The Country Cooking School

Your chance to enjoy a real taste of Portugal. The New Forest Lodge Country Cooking school is housed in an historic organic hill farm and equestrian estate on the edge of the Cabo Vincentina National Park. Join us and learn to cook in a real farm Kitchen. Learn to bake in a wood oven. Learn to select the freshest young vegetables from our organic kitchen gardens, fed from an historic Moorish well. This is a fun filled day and includes a visit to a local market and meeting some of the brave souls who help to get the freshest seafood to your table. Your fun packed day, starts with a relaxed cup of coffee and homemade cake around 10.00am.(We can arrange collection from your hotel or accommodation.) You will be introduced to us, your fellow guests and the kitchen with its wood fired oven and brushwood grill. Then it's off to the local fish market to soak up the local atmosphere and see the freshest of fish and vegetables. Back at the farm there is plenty to do, the wood oven will be lit but the bread must be made using fresh yeast from the baker. So roll up your sleeves and grab an apron.Herbs and organic produce from our gardens will be used to prepare salads and side dishes to accompany the bread , fish and meat that you will cook on the grill. We also have many vegetarian specialties for those guests who prefer not to eat meat, please let us know your preference when booking. Last but not least, something sweet - the dessert! All dishes are accompanied by appropriate local wines. Starting around 10.00a.m. and finishing around 4.00pm. after sitting down to enjoy the superb meal that you have cooked. The New Forest Lodge Country Cooking School is principally about having fun whilst learning a little about the proud heritage of Portuguese cuisine. We eat local food grown on our own or neighboring farms. Using traditional recipes, with wild herbs, fungi and the harvests from our organic Moorish kitchen gardens. We offer an insight into the forgotten art of cooking in brick built wood ovens and ranges. You will learn to select prepare and grill fresh fish, bake bread in our historic wood oven and learn how to chose the best fruits and vegetables from our organic kitchen gardens. You may even collect newly laid eggs from the poultry pens.
